Over the last few years, I was taught about healthy eating. The processed food we consume on a regular basis contains a lot of well hidden junk. From salts to fats and of course large amounts of sugar. The best bit of advice I was given was to avoid all processed food. I have not reached that level of discipline with my food consumption, but I am getting started on that track. Recently I created my own delicious and affordable vegetable curry recipe for vegans and I want to share it with you.
You should not feel you have to stick to this recipe, just think of it as a guide.
Here are the ingredients:
- 1 x Large pot of clean filtered water (2.5 liters or 0.6 Gallons).
- Olive Oil (Although not really required – I like to add it)
- Red Split Lentils
- Tomato’s
- Celery
- Jalapeño
- Capsicums or Bell Peppers (Red, Yellow & Green)
- Red Onion
- White Onion
- Cucumber
- Broccoli
- Carrot
- Green Split Peas
- Green Beans
- Hot Chillies
- and Coconut Milk
The Spices added to the mix included:
- Keens Curry
- All Purpose Seasoning (Yes, that is what it is called)
- Ground Cayenne Pepper
- Black Pepper
- Tarragon Leaves
- Bay Leaves
- and Piri Piri Seasoning.
The specific amounts of ingredients I used have been purposely left out. If you decide to make this vegetable curry yourself, it forces you to test through trial and error to find the taste you like. As you continue to add ingredients, take sample tastes of the water flavor. I would recommend letting the vegetables heat up and soak long enough to soften and breakdown before serving.
I forgot to add garlic this time round and recommend including it.
With the 2.5 litres of water (Half Gallon), it will create approximately 6 servings. Of course this will depend on the size of each serving. The left overs can easily be placed into a container, stored in the fridge to be reheated at a later date. As long as you are happy with the taste, the remainders will not be in the fridge too long.
It takes some time to slice up the various ingredients. However, once you’ve completed it, you are prepped for the next 6 dinner meals. It actually saves you time later on in the week. Once you get home later in the week, pull some curry out of the fridge and reheat on the stove for a few minutes, you have a delicious curry.
A little pre-planning and preparation is required, but the results are certainly worth it. The vegan curry is best for those cold winter nights; when you want to just snuggle under a blanket on the couch and feel warm on the inside. It just happens to be a healthy meal too!
